Végétarien, végétalien ou vegan ?
Rappelons ce que veut dire végétarien : « Régime alimentaire excluant toute chair animale (viande, poisson), mais qui admet en général la consommation d’aliments d’origine animale comme les œufs, le lait et les produits laitiers (fromage, yaourts). » (Définition Larousse)
On fait la différence avec les végétaliens et les vegans.
« Un végétalien ne consomme aucun produit issu de l’exploitation animale. Cela concerne donc la chair animale, mais également le lait, le miel ou les œufs. » (Définition consoglobe)
Le veganisme, quant à lui n’est pas seulement un régime alimentaire mais un « mode de vie alliant une alimentation exclusive par les végétaux (végétalisme) et le refus de consommer tout produit (vêtements, chaussures, cosmétiques, etc.) issu des animaux ou de leur exploitation. » (Définition Larousse). Donc ici, pas de cuir, de laine, des cosmétiques testés sur les animaux, etc.
Impact sur l’environnement et la santé
Aujourd’hui, selon Xerfi, les végétariens et vegans représenteraient 2% de la population française en 2018.
Nous ne sommes pas sans savoir que la planète va mal, en partie à cause de l’Homme et de la société de consommation. Il faut savoir que l’élevage représente 14,5% des émissions de gaz à effet de serre à l’échelle mondiale (autant que les transports). Il y a aussi de nombreuses terres cultivées exclusivement pour nourrir les animaux d’élevages, ce qui entraîne aussi la déforestation. Alors que ces terres pourraient être destinées à nourrir les Hommes. L’élevage a de nombreux impacts sur la planète : dégradation des terres, pollution de l’eau, déforestation.
Sur le plan personnel, selon une étude menée par l’université d’Oxford, un régime végétarien diminuerait les risques de maladies cardio-vasculaires, le diabète et les cancers.
Mais n’oublions pas le point le plus important, limiter sa consommation de viande et poisson permet de dire NON à l’élevage intensif, à la pêche massive et à la maltraitance animale.
Mais alors n’est-ce pas le moment pour penser à franchir le pas ? Ce que certain pense être une mode, ne serait-ce pas l’alimentation de demain ?
ENTRETIENS
Nous avons donc demandé à 4 végétarien.ne.s comment eux le vivaient. Maureen, François, Émeric et Sarah, âgé.e.s de 24 à 26 ans, étudiant ou dans la vie active, ont tous les 4 adoptés ce régime.
Ils/elles sont devenu.e.s végétarien.ne.s
« Pour raisons écologiques, ça me trottait dans la tête depuis quelques temps, mais l’élément déclencheur a été un reportage Arte sur les élevages de porcs, et quand tu regardes ça après c’est plus possible. En plus, on n’a aucune visibilité sur les conditions d’élevages et la provenance alors pour moi c’était évident d’arrêter » explique François, végétarien depuis environ 4 ans.
Pour Sarah (végétarienne depuis 4ans), ce sont également des vidéos dans des abattoirs de porcs publiées par L214 qui lui ont fait un déclic, mais aussi son amour pour les animaux : « Je me suis rendu compte que la viande qui est dans mon assiette venait d’êtres vivants qui ne voulaient absolument pas mourir. Bien évidement je savais ce qu’était la viande mais c’est comme s’il y avait une barrière dans mon esprit qui dissociait la viande de l’animal. J’ai compris que je n’étais pas obligée d’en manger, ça a donc été un plaisir de refuser d’en manger. »
Émeric nous explique que ses croyances n’étaient plus en accord avec ses actions, ce qui l’a poussé à arrêter progressivement il y a 5 ans : « Plus je m’informais sur les problématiques à la fois éthiques et environnementales via les reportages, lectures, etc. plus mon envie de consommer des animaux diminuait. Je ne consommais de la viande que par pression sociale, alors que je n’en avais pas envie. »
Tous les 4 n’ont pas arrêté du jour au lendemain, ça a été une démarche progressive. Dans un premier temps arrêter la viande rouge, ensuite la viande blanche, puis arrêter de prendre des plats à base de viande au restaurant et enfin de stopper totalement d’en consommer, peu importe la situation.
Quel ressenti dans une société omnivore ?
En minorité dans notre société mais de plus en plus visible on leur a demandé comment il se sentait vis-à-vis de cela.
« Je ne me dis pas végétarienne, je dis simplement que je ne mange pas de viande. Je me sens comme tout le monde, comme une personne qui ne mange pas de porc, de bœuf pour sa religion, c’est personnel et ça ne doit pas interpeller ni choquer selon moi » nous dit Maureen (végétarienne depuis 3 ans).
Émeric se sent également très à l’aise : « Très bien. Je n’ai que faire de l’avis général. Car je suis convaincu que mon choix est un choix de raison. Il faudrait plutôt poser cette question à ceux qui consomment de la viande. “Comment tu sens-tu après avoir mangé un être vivant, qui a été tué, probablement dans des conditions atroces ?” »
A l’inverse François se sent : « Un peu à part au final. Dès que quelqu’un le remarque, il ne parle plus que de ça et a toujours des questions ou des remarques inutiles “c’est vrai que j’y pense”, “je n’ai pas le courage”, “j’aime trop la viande pour ça”. »
Pour Sarah non plus ça n’a pas toujours été évident, « mon ressenti est complètement différent maintenant comparé à il y a 4-5 ans. Quand j’ai commencé à ne plus manger de viande et qu’arrivait le moment du repas cela était assez difficile pour moi. J’avais une forte envie d’en parler avec mon entourage familial, j’essayais qu’ils aient ce déclic comme moi. Maintenant le fait d’être végétarienne ne fait plus autant débat et je suis beaucoup mieux renseignée pour répondre aux différents arguments. De plus, j’arrive beaucoup plus facilement à ne plus prendre à cœur la cause végétarienne et ne cherche plus à convaincre mon entourage. »
Du côté de leur entourage, la nouvelle a été bien accueillie chez tout le monde. Il y a eu des interrogations, surtout de la part des Grands-Parents mais rien de mal. Sarah et François ont tenté de convaincre leur entourage mais sans succès. Tout le monde n’est pas prêt à renoncer à ses habitudes alimentaires.
Mais d’ailleurs, pour nos 4 végétariens, comment l’on t’il vécu ?
Renoncer à ses habitudes, ou pas !
Ils ont tous les 4 changé de régime progressivement. Pour Maureen, ça a été plus compliqué pour les repas « plaisir » et collectifs ». François, lui, a changé littéralement son alimentation puisque la viande faisait partie à part entière de son quotidien : « avant de devenir végétarien j’achetais par semaine : 88g de viande haché, 400g de poulet, du jambon. Donc oui, j’ai changé drastiquement d’alimentation. »
Sarah nous explique « qu’une habitude quelle qu’elle soit peut se changer en seulement trois semaines », elle a donc fait une transition assez douce.
Pour Émeric, c’est un choix du cœur, donc pas contraignant : « je ne conçois pas qu’on puisse dire “être végétarien/végétalien/vegan c’est contraignant”. Je préfère “renoncer à certaines habitudes” (qui ne sont d’ailleurs pas du tout contraignantes) plutôt que participer à un système qui tue 3 millions d’animaux chaque jour (seulement en France) et qui détruit notre environnement. »
Les bienfaits de ce régime
Du point de vue personnel, cela a eu des effets positifs sur leur sommeil, transit, perte de poids.
Mais de la part de tous, les bienfaits pour les animaux et l’environnement sont les plus importants. Émeric nous explique : « du point de vue éthique, ne pas participer à un système qui anéantit des milliards d’êtres vivants chaque année. Du point de vue environnemental, ne pas participer à un système responsable de près de 15% des émissions de CO2. Du point de vue de la santé : alimentation plus diversifiée, plus riche et diminution des risques de maladies cardio-vasculaires. »
Leurs conseils pour passer le cap
« N’y va pas par quatre chemins et si tu n’es pas assez motivé regarde un reportage sur les élevages de porcs et poulets ou encore une vidéo de l’association L214 et ça devrait venir. » François nous propose une méthode radicale mais efficace pour lui.
Maureen est moins extrême dans son conseil : « pour quelqu’un qui veut arrêter la viande, il faut surtout le faire par envie, ne pas se sentir contraint de le faire. Diminuer est déjà “suffisant”, l’arrêter complètement reste un choix personnel. »
Sarah explique sa méthode : « Je pense qu’y aller par étape aide à adapter ses habitudes en douceur. Rejoindre des groupes Facebook ou suivre des comptes Instagram, YouTube, ou sur d’autres plateformes de personnes végétariennes ou même vegans peut être inspirant pour trouver des recettes. Un groupe Facebook constitué de personnes végétariennes, vegans ou voulant aller vers ces régimes alimentaires m’a beaucoup aidé au début, car les utilisateurs postent leurs expériences ce qui m’a permis de premièrement voir qu’il y avait pire situation que la mienne mais surtout de me sentir comprise et entourée. »
Émeric nous dit : « n’aie pas peur du regard des autres. Personne ne te reprochera d’œuvrer pour une cause juste. Ou alors, éloigne-toi de ces personnes. »
