Pour commencer, les produits fermentés qu’est-ce que c’est concrètement ?
Sans qu’on ne se rende compte, les produits fermentés font partie intégrante de notre alimentation quotidienne depuis toujours, ils sont présents en quantité très nombreuse dans nos repas de tous les jours.
Ces produits aujourd’hui sont présents absolument partout, dans la viande, le lait, les céréales, les légumes, les fruits, légumineuses…
On connaît tous la choucroute, le cornichon, les yaourt, les olives, le saucisson, le fromage, ou même le vin, ces produits peuvent bien être fermentés sans qu’on ne le sache.
Comment ces aliments sont-ils fermentés ?
Pour parvenir à cette fameuse fermentation, ces aliments sont d’abord privés d’oxygène pendant un certain temps et un phénomène très précis se crée : «une transformation par l’action de bactéries, de levures ou de champignons filamenteux, plus communément appelés moisissures » comme expliqué par un expert microbiologiste.
Et cette pratique, bien qu’elle soit très tendance aujourd’hui, existe depuis plus de 10000 ans et d’ailleurs est très efficace comme outil de conservation alimentaire.
Ces fameuses bactéries qui se créent suite à cette technique digèrent le sucre présent dans les produits et se transforment en différents acides, ou même en alcool qui vont eux empêcher les bactéries pathogènes de se croître dans les aliments et donc les préserver d’un risque sanitaire.
Pourquoi les produits fermentés sont-ils si discutés aujourd’hui ?
Tout simplement car ils regorgent de bienfaits nutritionnels, et règlent les problèmes de digestions et les problèmes intestinaux.
La fermentation aide en effet à pré digérer les aliments et donc participe à une bonne digestion.
Par ailleurs, nous vivons aujourd’hui dans une société où l’alimentation et la « bonne alimentation » font partie des enjeux actuels. On peut d’ailleurs considérer ces produits fermentés dans la famille « super aliments » ou aliments médicinaux très tendance et très utilisés aujourd’hui. On peut le voir d’ailleurs que de plus en plus de chefs médiatisés (notamment sur l’émission Top Chef avec l’apparition très fréquente de ces aliments) les utiliser.
Attention, il faut tout de même choisir le bon produit fermenté
Certains aliments bien qu’ils soient fermentés ne sont pas toujours bons à être consommés. On peut parler par exemple du saucisson qui n’est pas forcément le meilleur allié santé présent chez cette famille. Bien au contraire, il contient des nitrates toxiques néfastes pour le tube digestif. On peut parler aussi de la bière, ou du vin qui ne sont pas non plus les meilleurs alliés de nos intestins.
D’autres produits aussi sont à consommer avec un peu plus de d’attention, les produits très riches en sels comme la sauce soja ou les cornichons.
La plupart des autres aliments fermenté eux, restent bon pour notre organismes.
Et pour finir, il faut savoir que pour bénéficier de l’ensemble des vertus de ces produits, il faut les consommer assez rapidement.
