La semaine dernière, l’enseigne Leclerc annonçait avoir décidé de fixer le prix de la baguette à 29 centimes d’euro pour une durée d’au moins quatre mois.
Elle explique cette décision comme étant une conséquence de l’inflation.
Peu de temps après, Lidl a pris la parole à son tour en expliquant avoir décidé à contrecoeur, de lancer leur baguette au même prix pour pouvoir s’aligner avec le plus grand distributeur.

Qu-est-ce qui a poussé Leclerc à bloquer ce prix
La baguette à 29 centimes lancé par Leclerc apparait comme une aubaine pour les consommateurs.
Ce n’est pas la première fois que le groupe fait parler de lui en cassant les prix : son opération « carburant à prix coûtant » lancée pendant l’été avait permis à l’enseigne d’apparaitre comme un acteur engagé pour le pouvoir d’achat des ménages.
C’est l’argument que Leclerc a décidé de mettre en avant, l’objectif de ce blocage des prix est de préserver le pouvoir d’achat des Français en pleine période d’inflation.
La colère des boulangers et des producteurs céréaliers
Les boulangers et les producteurs céréaliers ne peuvent s’aligner face aux géants de l’agroalimentaire et ce pour plusieurs raisons.
Depuis un an, les stocks mondiaux de blé sont bas notamment en raison des multiples intempéries. Les prix du blé ont alors explosé, une hausse de +30% en seulement un an.
Le prix moyen d’une baguette chez un artisan boulanger est d’environ 90 centimes, divisé ce prix par 3 n’est donc pas envisageable pour eux.
Plusieurs syndicats de la filière dont la Fédération nationale des syndicats d’exploitants agricoles (FNSEA) se sont exprimé en dénonçant « une campagne destructrice de valeurs pour tous les maillons de la filière céréalière française »
Ils expliquent qu’une telle campagne publicitaire envoie un signal très négatif sur la valeur du travail et de la reconnaissance du savoir faire de l’ensemble de ces acteurs qui méritent une rémunération à la hauteur de leurs efforts.
Décomposition du prix d’une baguette
Aujourd’hui, une baguette française vendue 90 centimes se décompose de la manière suivante :
– Les matières premières (farine, eau, levure, sel) : 18 centimes. « La part spécifique de la farine dans le prix final d’une baguette était de 11,5% en 2020 », précise Jean-François Loiseau ;
– Les charges et salaires : plus de 53 centimes ;
– Les charges liées aux impôts, aux transports et aux emballages : 11 centimes ;
– Le bénéfice du boulanger, situé entre 5 à 7 centimes.
Il reste donc à voir si les autres enseignes déciderons également de s’aligner ou si au contraire elles lanceront des campagnes pour soutenir la filière céréalière et trouver un juste prix pour les consommateurs et les producteurs.
